Muesli Bars

Refined sugar free and nut free muesli bars. Great for lunch boxes or breakfast bars on the run or during school sports activities


Prep time: 10 mins

Cooking Time: 40-45mins

Serves: Makes 10 muesli bars


Ingredients:

2½ cups rolled oats

½ cup shredded coconut

¼ cup pepitas (pumpkin seeds)

2 Tbsp. chia seeds

1½ tsp. ground cinnamon

2/3 cup pitted dates or dried apricots

½ cup mixed nuts (omit to make nut free or replace with seeds &/or cacoa nibs)

¼ cup macadamia nut oil/olive oil

2 Tbsp. maple syrup

1 tsp. vanilla extract

1 egg, lightly beaten


Method:

  1. Preheat oven to 140°C or 120°C fan forced. Line a 20x30cm rectangular baking tin with baking paper

  2. Place the rolled oats, coconut, pepitas, chia seeds, cinnamon, dates and cashews in a large mixing bowl.

  3. Place the oil, maple syrup, honey and vanilla in a small saucepan, cook over medium heat until just combined. Add this to the dry ingredients and stir to combine. Add the beaten egg and mix well until all ingredients are well combined.

  4. Using slightly wet hands, press mixture firmly into the lined baking tin. Press mixture with the back of a spoon to get a smooth even surface.

  5. Bake for 40-45 minutes, or until an even golden brown. Allow to cool completely before removing from tin and cutting into bars

Muesli bars can be stored in the fridge for up to 7 days
