Granola

Most store bought Granolas are full of sugar and contain large amounts of refined oils like vegetable oil, canola oil and grapeseed oil. This Homemade granola is refined sugar free, high in protein and delicious and easy to prepare. Whole rolled oats have also been proven to have cholesterol lowering benefits.


Prep time: 5mins

Cooking time: 25 – 30mins

Serves: 8


Ingredients:

2 cups rolled oats

¾ cup mixed raw nuts (i.e. almonds, macadamia, walnuts, cashews)

½ cup pepitas or sunflower seeds

¼ cup dried organic/sulfur free apricots or fresh dates (optional)

¼ cup sulfur free shredded coconut

2 Tbsp. extra virgin olive oil or coconut oil

2 Tbsp. pure honey or maple syrup

2 Tbsp. fresh orange juice

1 tsp. ground cinnamon


Method:

  1. Preheat oven to 180°C

  2. In a bowl, whisk together the oil, honey/maple syrup and orange juice and set aside

  3. Add the oats, nuts and seeds to the wet ingredients and mix well to ensure all ingredients are coated.

  4. Spread the mixture evenly onto a lined baking tray and bake for 15mins

  5. Remove from the oven, add the apricots/dates and bake for a further 10-15mins until golden brown. Stir regularly to ensure it does not burn

  6. Remove from the oven. Add the coconut and cinnamon and allow to cool.

  7. Once mixture is completely cooled, store in an airtight container in the fridge or a cool dry place for up to 2 months
